One of the highlights of this fall was taking photos for my friend's Sara & Jeff on their wedding day and the next day in and around Rockport, MA.

Almond Muffins

This post is unrelated to photography, but I did take these shots with my new FujiX100... I am in love.

Ok, back to the Almond Bread Mix. It's a fantastic bread option for those of us who live gluten free. As an added bonus it's also low carb. (Reminder: Gluten free products are a trap. Eat real food, feel better.) For Christmas I'll post a vegan, gluten free chocolate dessert recipe to die for!

Trader Joe's has amazing almond meal, great value. Stock up! You can usually find it in the nut section, but I've also seen it in the baking section.

Almond Bread (2 loaves or muffins)

Preheat the oven to 350, grease your pans with coconut oil or olive oil.

4.5 cups Almond Meal
1tsp Sea Salt
1tsp Baking Soda
5 eggs
2tb Agave Nectar or Honey
1tsp Apple Cider Vinegar

Mix dry ingredients together & wet & then combine. Place in 2 loaf pans or muffin tin 6-12 depending on how big you want them.

Bake for 20-25 minutes. Do the toothpick test. They will turn golden brown, and can be slightly moist... it's a matter of preference.

This makes a great protein fix mid morning or something to put some preserves on, it's like a healthy PB & J!

For a sweeter variation, try this:

2.5 cups Almond Meal
1/2 tsp Sea Salt
1/2 tsp Baking Soda
1/3 cup Coconut Oil
1/4 cup Honey or Agave
2 eggs

You can also add chocolate chips, nuts or fruit to the muffins. 20-25 minutes at 350 depending on your "doneness" preference.

Also, I found this recipe online... google "trader joes almond bread" and you'll find something similar. I am not a baker.
